4 simple grill season recipes

Summer-like weather has quickly replaced the chill of early spring, and many of us are already planning outdoor picnics and getting our grills and barbecues ready for the new season. To properly celebrate the start of grill season—and to make it easy to decide what to cook— in this article, we recommend some fantastic grill recipes that you should give a try!

Grilled Chicken

You will need:

  • 4 chicken breast halves

  • ¼ cup balsamic vinegar

  • ½ tsp lemon pepper seasoning

  • juice of 1 or ½ lemon

  • 2 tbsp olive oil

Place a sheet of parchment paper or plastic wrap on a flat surface, place the chicken breast on it, and cover it with another sheet of parchment or plastic wrap. Use a meat mallet or other tool to pound the chicken to an even thickness level. In a bowl, mix the balsamic vinegar, lemon pepper, oil, and lemon juice, then add the chicken breasts. Let the chicken marinate for 30 minutes. Oil the grill grates and grill the chicken—cook each side for about 5–7 minutes.

Pork Ribs

You will need:

  • ¼ cup brown sugar

  • ¼ cup smoked paprika

  • 2 tbsp salt

  • 1 tsp garlic powder

  • 1 tsp cumin

  • 1.5 kg pork ribs

  • BBQ sauce

In a small bowl, mix the sugar, paprika, salt, garlic powder, and cumin. Coat the ribs thoroughly and evenly with the spice mix, then tightly wrap them in aluminium foil. Bake the ribs at about 200°C — cook each side for about 1.5 hours. After 3 hours have passed, remove the ribs, take off the foil, and let them rest for 10 minutes. Heat the grill to 450°C, place the ribs directly on the grill, and brush with BBQ sauce. Grill each side for 1–3 minutes until the sauce caramelises.

Chicken Wings

You will need:

  • 1 cup ketchup 

  • 1/3 cup soy sauce

  • ¾ tsp grated ginger

  • 4 tsp honey

  • ½ tsp garlic powder

  • 1 – 1.5 kg chicken wings

In a bowl, mix the ketchup, soy sauce, ginger, honey, and garlic powder. Set aside one cup of this marinade in a separate container and use it to coat the chicken wings evenly. Let the wings marinate in the fridge for 4 hours (or overnight). Do not discard the remaining marinade—you’ll need it for grilling. Grill the wings, turning them occasionally, for about 15–20 minutes. While grilling, brush them with the remaining marinade every few minutes.

Grilled Stuffed Potatoes

You will need:

  • 4 large potatoes

  • 1 tbsp olive oil

  • 120 g cheddar cheese

  • Salt

  • Some sour cream

  • Some bacon

  • Green onions

Wash and dry the potatoes thoroughly, then pierce them with a fork in several places. Heat the grill and microwave the potatoes for about 8 minutes. Let them cool slightly, then rub them with olive oil, and sprinkle with salt. Wrap each potato in aluminium foil and pierce it again with a fork. Grill the potatoes for 45 minutes to 1 hour, until the inside is soft. Carefully remove the top part of the foil, cut open the potato, and fill it with grated cheese, sour cream, bacon, and chopped green onions.
