3 easy winter season recipes for drivers

One-pot chicken and rice stew

This stew is an incredibly simple source of essential nutrients that will help you warm up and strengthen your immune system. It doesn’t require much time to prepare, and the process itself is very easy.

Ingredients:

  • Butter

  • Salt and pepper 

  • 1 cup of chopped carrots

  • 2 cups of white rice

  • 1 tbsp dried onions

  • 1 tsp garlic seasoning

  • Parsley or other spices of choice

  • Chicken broth cubes

  • 2 chicken breasts

Steps:

In a heated pot, add a piece of butter and melt it. Add the chopped carrots, salt, and pepper, and let them simmer for a few minutes. Add the rice, dried onions, and garlic seasoning. Coat the rice with butter. Dissolve the chicken cubes in hot water (~1.5 liters). Pour the broth into the pot, then add parsley or other preferred spices. Stir the contents of the pot to prevent the rice from sticking to the bottom. Season the chicken with salt and pepper, then cut it into small pieces. Reduce the heat, and after 15 minutes, add the chicken to the pot. Let the stew cook for another 10 minutes. After cooking, add a bit more butter and season the stew with salt and pepper to taste.

Beef and potato stew

This stew is perfect for the cold winter season. It’s a dish that brings the comfort of home and helps enrich your body with important nutrients. While making this stew, you can easily add more vegetables of your choice to increase the vitamin content.

Ingredients:

  • 450g ground beef

  • Olive oil 

  • 2 tsp cumin

  • Salt and pepper

  • 3 medium-sized potatoes (chopped)

  • 1 onion (chopped)

  • 1 bell pepper (chopped)

  • 1 green chili pepper (chopped)

  • 2 garlic cloves (minced)

  • 2 tomatoes (chopped)

  • Green onion (optional)

Steps:

Heat oil in a pot, add the ground beef, cumin, salt, and pepper. Cook, stirring, until the beef browns. Transfer the beef to a plate. Add a little more oil to the pot, and cook the potatoes. Once the potatoes are cooked, transfer them to the plate with the beef. Add more oil to the pot, then add the onion, bell pepper, and green chili pepper. Let it cook for about 6 minutes. Add the garlic and tomatoes, and then return the beef and potatoes to the pot. Mix everything well. When serving, garnish with green onion.

Mushroom risotto

Risotto is a great warm dish that you can prepare very quickly. Although the taste of risotto is wonderful, no special skills or cooking expertise are needed – this dish is very easy to make.

Ingredients:

  • 900g mushrooms (button or cremini)

  • 2 shallots

  • 1.5 liters of chicken broth

  • Olive oil

  • Salt and pepper

  • 300g Arborio rice

  • Butter

  • Parmesan cheese

Steps:

Thinly slice the mushrooms. Finely chop the shallots. Pour the broth into a pot and wait for it to almost come to a boil – then reduce the heat. Heat a tablespoon of oil in a pan, add the mushrooms, and season with salt and pepper. Once the mushrooms are lightly brown, transfer them to a plate. In the same pan, add a little more oil and sauté the shallots. After 1-2 minutes, add the rice and gently toast it until it takes on a golden hue (about 3-4 minutes). Using a ladle, add 1 liter of broth to the rice. When the rice has absorbed all the liquid, add the remaining broth. Reduce the heat and stir continuously. This process should take about 30 minutes. Once the rice has absorbed all the liquid, add a few tablespoons of butter and about 1/3 cup of grated Parmesan cheese. Season with salt and pepper if needed.
